BALPINARI BLACK HONEY (OAK HONEY) BLACK FOREST HONEYDEW HONEY. During certain periods of July and August, some small insects (scale insects, aphids, psyllids, etc.) feeding on pine, oak, chestnut, spruce, linden and maple in the mountain forests where the Northern Aegean and Southern Marmara meet secrete a sugary substance. The waste substances left over from the feeding of these insects, very rich in minerals and sugars, form a beneficial food source for honey bees. These valuable substances are collected by the bees and carried to the hives. Thus Black Honeydew Honey emerges, with certain characteristics different from nectar honey. Black Honey, produced from the secretions of the trees in these mountain forests and from endemic plants, is traditionally valued for its positive effects on human health, as noted by experts in the field. This honey is a dark-coloured honey that is produced very little in Turkey and in the world compared with other honeys, is very rich in phenolic compounds and has a high biological activity value.
